Ingredients
3 and 1/2 to 4 cups all purpose flour
1 and 1/2 cups warm water (110 degrees)
1 tbsp sugar
2 tsp active dry yeast
1 and 1/2 teaspoons sea salt
3 tbsp vegan butter, melted
6 cups of water (For baking soda bath
3 tbsp. baking soda
½ cups sugar (for topping)
3 tsp. cinnamon
Preparation
Take your warm water and place it into a large mixing bowl along with the sugar. Add your yeast in and activate for 10-15 minutes.
Once the yeast is activated, mix in the salt and vegan butter. *You will know the yeast is activated once yeast is foamy.”
Slowly mix the flour in, one cup at a time until you can handle the dough properly. It should not be too sticky, but be careful not to add too much flour. I used about 3 and ½ cups.
On a clean lightly floured surface, knead your dough for 10 minutes or until all of the air bubbles are out and the dough is smooth.
Once the dough is kneaded, place in a large oiled bowl and cover with a warm cloth for 30 minutes. Make sure the dough is in a warm area.
While your dough is rising line 2 baking sheets with parchment paper and preheat your oven to 450ºF.
After the dough has risen, cut into medium sized pieces like you would pizza dough.
Use your hands to roll each piece into a long rope. About a foot and a half long. Cut each rope into bite-sized bites. (2 inches).
Prepare the baking soda bath by boiling the water. Once the water is boiling, add in 3 tablespoons of baking soda.
Place about 7-9 bites in the bath and let them soak for 30 seconds. They will puff up a bit and that is normal. After 30 seconds remove the bites from the bath and transfer them to your baking sheets.
Bake at 450ºF for 9-11 minutes or until brown. Brush with vegan butter once the bites are finished.
For the topping mix cinnamon and sugar and set aside.
Place the bites into your cinnamon sugar bowl and place a lid on them. Shake until the bites are evenly coated.
