Tips
Adjust seasonings to your liking.
If you do not have the smoky bacon flavor sub ½ tsp of liquid smoke and ½ tsp of maple syrup.
If you do not like your stew on the thick side use 1 tbsp of flour instead of ⅛ cup.
If you don’t have access to low sodium vegetable broth then use regular vegetable broth.
Coconut aminos or soy sauce can be subbed for liquid aminos.
Do NOT oversalt or it will be too salty. The longer it sits the more it will absorb the flavor.
Jackfruit Marinade
⅓ cup liquid aminos
1 tbsp garlic powder
1 tbsp paprika
½ tsp cayenne
1 tsp ground thyme
1 tsp smoky bacon flavor syrup
Pepper
2 cans jackfruit in BRINE
1 package portobello mushrooms
Ingredients for Stew
2 medium yukon potatoes, chopped
½ yellow onion, chopped
1 tbsp garlic, minced
2 cups carrot chips
1 tsp maple syrup
2 tsp garlic powder
1 tsp rosemary
1 tsp smoked paprika
Pinch of Salt
Pepper
1 bay leaf (optional)
32 oz low sodium vegetable broth
Preparation
Prepare the jackfruit by rinsing and removing the seeds (optional). Break it into smaller pieces similar to beef chunks. Place the jackfruit in a mixing bowl along with everything under jackfruit marinade. Mix and set in the fridge covered for minimum 30 minutes.
While your jackfruit is marinating, prepare the rest of your vegetables and set aside.
In an oiled frying pan on medium-high cook the jackfruit until all of the liquid is evaporated. Takes 5-10 minutes. When the jackfruit turns brown it is finished.
Add all of the ingredients under stew ingredients in your instant pot or crock pot. If you are using an instant pot set to the meat/stew setting for 30 minutes. At the 30 minute mark take ⅛ cup of flour and ¼-½ cup of brother and mix together in a separate bowl. Once it is mixed thoroughly, add it back to the instant pot and cook on the meat/stew setting for another 5-10 minutes. Make sure it is NOT clumpy. This will help thicken the stew up and is completely optional.
If you are using a crock pot add all ingredients under stew ingredients in the crockpot and cook on high for 4-5 hours. At hour number 4 take ⅛ cup of flour and ¼-½ cup of broth and mix together in a separate bowl. Once it is mixed thoroughly, add it back to the crock pot. Cook for another 30-60 minutes or until thickened. Make sure it is NOT clumpy. This will help thicken the stew up and is completely optional. If you are going to work, cook on low for the amount of time you will be at work.
Serve over rice, mashed potatoes, or by itself and enjoy!
